Ingredients:
- 2 boneless skinless chicken breast halves
- 1/4 cup wholegrain mustard
- 2 Tbsp dijon mustard
- 2 Tbsp mustard powder
- 1/4 cup honey
- 3 tsp olive oil
- Salt and freshly ground black pepper
- 1/2 cup chopped onion
- 2 cloves garlic, minced
Method:
- Preheat oven to 180 degrees
- In a bowl mix together wholegrain mustard, dijon mustard, mustard powder, honey and 2 tsp olive oil
- In a frying pan, heat remaining olive oil over medium heat. Add onion and saute 3 minutes then add garlic and saute 30 seconds longer
- Put the onion and garlic mix into a baking dish and spread into an even layer
- Season your chicken breast with salt and pepper on both sides, then set chicken over onion layer in baking dish
- Pour mustard mixture over chicken breast evenly
- Cover the dish with foil. Bake in preheated oven 20 minutes then uncover and bake until chicken has cooked through, about around 15 minutes longer
- Serve warm with rice and veggies, and don't forget to spoon over sauce over chicken
